1/ I've got a CNC machine I built from a kit with terrible ergonomics - the keyboard and monitor sit atop the machine bed. This must be a solved problem that sysadmins face in server rooms all the time, right? I think I want a monitor stand & keyboard tray.

Lagun makes an RV table mount that's sturdy and vertical mount. Most monitor arms I've seen that aren't one-piece simply slip the arm over a post on the bracket. So all you really need mounted is a post of the right size, then the arm will be stable.https://www.lagunusa.com/

Also grommet-mounting arms rather than clamp alleviate the pressure issues (front/back), but are still horizontal.

In datacenters, you usually just want a crash cart since the machines can operate without interface, but when you get permanent interface it tends to be 'rack-shaped'. You probably don't want that, so your linked solution is good. It looks like the top half of a crash cart.
