pull ~55 lbs of liverwurst out of hot water bath now cooling, spread out on kitchen table into the freezer in a few hours not sure how I like vac seal bags vs linen sausage casing - easier, yes, but ugly / flat / crumble in the middle

fabric bags are nice bc the meat swells and stretches the fabric taught, and it makes a nicely formed cylinder starting to have thoughts of a reusable wurst mold picturing a long pipe, capped at both ends, cut in half, and held together w aircraft clamps stainless? PVC?

I don’t know what an aircraft clamp is, but now I’m picturing this monstrosity held together by a marmon clamp like a missile and it’s hilarious for some reason
