Something that happens to me fairly often is when I get a steak from a 'fancy' place and cook it at home, it often tastes less good than one from costco. Is it just that my cooking method is messing up in that case or is it actually possible I just prefer the taste of cheap?

there's a rule of thumb that at a restaurant the ingredients can't cost more than 1/3 of what they're sold for on the menu (to cover labor, rent, etc.) so a $30 steakhouse steak is < $10 materials cost
