wife @LibertyFarmNH cooked enchiladas over the weekend. She modified my recipe which was a modification of a cookbook recipe.
She used flank steak, from a cow carcass I bought from a homesteading friend and butchered. The meat is ... flavorful.
Very flavorful, bc grass fed.

2/ I usually use pork, cook it in the crock pot, then shred it and pan fry the shreds in a bit of lard to make them brown. 3/ boiled it down to a thick demiglace (again, stove FTW !) and poured that into the enchiladas. Literally the best enchiladas I've had in my life. Adding the recipe to the homesteading book.https://escapefromthecity.backerkit.com/hosted_preorders …
