thinking on this more, I think you want pigs. 1 pig = 400 lbs live weight = 200 lbs cut weight (all meat) 1 lb/person/day = ~30 pigs per year. At this point I can butcher a pig in about 1 day. So 30 man days of work for the above. With a 20 man crew, that's like 1 weekend.

Gonna need a lot of freezers tho. 20 lbs of meat / cubic foot = ... LOTS of freezers. But maybe have a rotating schedule where you butcher every 4 months. Cut the # freezers by 2/3
