The folks most adamant about getting people to eat less/no meat are so very bad at articulating reasons to stop that might actually conflict with the reasons people eat meat. "Eat less meat to help the working poor!" Me, turning to minimum wage waiter: "Medium rare, please."

Simply put, if you can make a veggie/bug Frankenstein steak that tastes as good as and has similar nutritional value to an actual sirloin, and at a similar price point, you might win converts. All the moralizing and shaming is just piss in the wind.
