2/ the key thing is that the solubility of CO2 in water is pretty high at low temperatures ; the solubility of argon is TERRIBLY low . It won't go into solution, but will just sit, pressurized, atop the beer / soda / whatever. Solubility is something like ~ 1% IIRC.
