It’s not weird, but to modern eyes accustomed to the out-of-sight standards of modern meat packing, the idea of getting the family together to excavate by hand a flensed carcass seems surreal.

I've got the same double vision never was directly involved in butchering (though I did watch my highschool bf's mom castrate a goat) but I was...adjacent enough so my gut reaction is simultaneously "ew that's gross/weird" and "lol where did you *think* your meat came from?"
