Cleaned beef heart and tongue, cubed, now freezing. Going to toss in w the misc bits for ground beef when I butcher next weekend. Boned out the head to get the cheeks. Sous videing for 24 hrs at 140°F then pan frying. Tossed rest of head to the dogs. No deep fried brain this yr
