Was looking forward to a visit by @ngvrnd and son and puppy today, but that got rescheduled.
Guess I'll start butchering pig #2 instead.

3/ Broke down the front thirds and got them vac sealed and into the freezer. Lots of Boston Butt and picnic ham for pulled pork, etc. Also put aside a lot of mince for sausage. Maybe 20 lb so far? Tomorrow morning I'll break down the two hams into ham steaks. >>>

4/ Not going to commit to ALL of the following, but could imagine one or more of * rendering more lard * smoking hams * making sausage (chorizo? More hot Italian?) * roasting the skeleton of pig #2 and making more stock * turning the stock I already have into soup & canning it
