there's a lot of resources out there for e.g. Mormons who do this stuff day-to-day you can just buy dry goods and pack them without oxygen, keeps for years, and when they age out you can just make normal meals from them

(rather than your Prep Food being this side project completely separate from your day-to-day life, and easy to neglect until it's all full of botulism or whatever)

I'd recommend doing like the Mormon's do — large pantry full of canned and dry goods that you use on a regular basis, constantly restocked and rotated so that you always have surplus but don't let anything sit for ages and ages

You want lots of dried food. Canned food as well, but dried food is more space efficient and I believe keeps longer. You need water of course, but without water in plenty you're dead anyway. I can imagine having some MREs stocked as well, but they're really only for in-a-pinch.
