      14/ Liverwurst are off the stove, soaking in an ice bath to cool them down before refrigeration. Will probably slice into 2 lb blocks, freeze solid on a tray, then vacuum seal each block individually.

      18/ Got front third (shoulder) broken down into upper and lower, boned out upper into boston butt, bones for stock, and a small 3-bone serving of ribs. Processed lower into picnic ham, sausage scraps, and bones for stock. Breaking for lunch, then will finish rear third (hams)
