I should relate the experiences of my friend in setting up his 'Nawlins'-style food truck, vice the taco trucks of his competitors. Hint: they view health dept. fines as a cost of doing business, not something to be avoided through compliance.

I wish we could have suggested guideline/best practices, even inspections and grading, with widespread publication of the inspection results, but let people operate their businesses unless/until there's an actual foodborne illness. It's entirely possible the taco trucks do fine.
