Because of FDA rules, you can buy a whole or half carcass from a farmer...or individual cuts, but in the latter case, the butchering must be done in an inspected / certified facility. Indeed. It was quite an investment to get: * gantry crane * set of butcher knives * steel * bench scraper * hook * bone dust scraper * knife case * huge cutting board * industrial meat grinder * mixer * sausage stuffer * smoker * scales * S hooks but now with all, fun & easy
