The new sauce was a success! It was not ambitious, but it delivered on its modest promise quite satisfactorily. Soubise sauce - a lightly seasoned blend of pureed lightly-cooked onions and cream (or roux, but in this case, cream).

I tried it plain, with nutmeg, and with curry powder. Each was tasty; each had their own accent. Recommended. A key element, I think, is that it's a sauce, and won't be culinarily complete until it's paired with some meat. It will enhance, not dominate or define.
