theory re @EvanMcM observation:
perhaps new tech & market options (Amazon Prime, grocery delivery, etc.) is EXACTLY poaching those customers who are most competent / make best use of their time, so there's selection bias where folks in brick-and-mortar stores are less competent

3/ I've absolutely noticed that when you shop at times of day when competent people (who are employed) are at work, the aisles get much much harder to navigate e.g. 2pm on a Tuesday is when alcoholics, disabled, pensioners, unemployed, and other incompetents get their groceries

"Evaporative cooling" is approximately the worst possible metaphor for adverse selection, to point of being much worse at communicating your idea than just saying "adverse selection" and making unfamiliar people look it up.
