In instruction, third person lends a feel of formality. Appropriate for corporate docs, etc. 1st gives a feel of "I was there". If you're documenting what YOU did as story, or if experience is unique ("here's how *I* climbed Everest with no oxygen) use 1st. Otherwise, 3rd
