Butchered one pig yesterday, and a second pig today. Hanging weight was 350# each, so live weight was 500# each. Halves = 175#. Non trivial to get on a shoulder and carry. 85# belly curing for bacon. 150# dice freezing for sausage. 20# lard rendering. 40# bone roasting for stock

And by "non trivial", I mean, I'd lean into it, get it up one one shoulder, and then ask
@LibertyFarmNH to unhook the gambrel from the hamstring, because there was no way in heck i could do that myself.2 replies 0 retweets 6 likesShow this thread -

3/ So! Speaking of Krieger, watching Archer actually helped me today! >>>https://twitter.com/RantinArkansan/status/1066835967674331136?s=19 …

4/ I was struggling to get the 10 mil black gloves on (5 mil blue ones go on easy, but rip just as easy) and suddenly I remembered Krieger's line "...like a latex gimp suit...I'm a firm believer in corn starch".https://youtu.be/Vn7E1mRoJ8o

6/ This is on the heavy side. Normal? No. Normal for me? Sadly, yes. I bought piglets from local farm store the one day of the year they're offered: 20 May. I slaughtered them the first weekend that the weather was cold enough to hang them 1 week < 38°F https://twitter.com/Caine60724874/status/1066838990567936000?s=19 …

7/ So: 20 May (maybe 6 weeks old?) - 18 Nov, both dates dictated by conditions outside my control. They grow fast.

9/ This is obviously not a way to save money; it's a way to enjoy the hobby of farm LARPing and a way to opt out of the world of terrible factory farming.

10/ More like 580 lbs, or so, as I sold one half to a friend. In 2016 we raised 3 pigs, they got WAY HUGE (435 lb hanging), and 1,000 lb cut weight lasted us 2 years. In 2017, 2 pigs x 235 lb = 470 lb hanging lasted 1 yr, but bacon ran out early. https://twitter.com/Caine60724874/status/1066855768908054530?s=19 …

11/ So it looks like 500 lb hanging weight = maybe 325 lb cut weight = just right for 2 people for 1 year. N.B. we eat a lot of bacon, pulled pork, and pepperoni.
