I think maybe the only practical way to cook it is sous vide in an oversized hot tub.

You're much more likely to get an even cook with sous vide, especially if you again use a tube or three through the middle. But I think this simply means we need to test the methods head-to-head.

I think that's universal. Sous vide to cook it, pan or grill for texture, appearance and -- and now I can't remember the technical term for the surface of pan- or grill-cooked meat. But you know what I mean.
