Had some of @BostonDelendEst 's #HUNV lamb for lunch yesterday.
Spicy...also a little sandy (!!). Wife fried it & served on pita, and we dolloped on some sour cream / sumac / etc. sauce.
Meat alone had strong musky mutton flavor, but sauce moderated. End result: really good!

2/ We experimented with pit roasting it. All in all worked very well / much was learned. I suspect a pinhole tear in the Al foil let a bit of sand in. All good, though!https://twitter.com/notStPat/status/1059452485193076736 …

Replying to @MorlockP @BostonDelendEst
For thanksgiving we used to make a tripod of rebar, then hang the turkey via chain from the top. Put a coal fire in the bottom and wrap the whole pyramid with tub foil, leaving a little chimney hole in top. Let go and check every half hour

next year we'll either pit roast again (with better / more coals), or maybe open-fire roast
