1st day of Animal Science Lab at TAMU, we had to go to the campus abattoir and watch several different species of livestock be killed and butchered. A captive bolt was used to kill them, and knives were used to butcher them. Kill ≠ butcher. Industrial abattoirs don’t use guns.

Agreed that kill != butcher. I do both and they're separate steps. We all agree that captive bolt stunners are used in industry ; the question is "are guns ever used?" and, yes, that's what most small farmers use.

OK, I guess I was confused. I know that small farmers use them - as would I if I were a small farmer. A couple of the users above sounded like they were conflating killing with butchering, and industrial killing with gun use.
