But sometime if you're bored, try splitting a shoulder ("Boston Butt") into two slabs and then doing the rest of your process. Baby steps: got a whole haunch of venison (from a guy at the range who hunts), had to butcher it further down. A nice 15 pounds of meat. I hence rate myself 87 milliMorlocks.
