Just did a job interview with someone who, if hired, would apply for an H1B visa. Is it a bad idea for me to ask that person to do big money payments? The home country does not have an extradition treaty with the USA. Too easy for them to embezzle and bounce to the motherland?

Unless it's millions, otherwise nobody will bother to do it. The risk probably isn't much different for an US citizen to run away with your money to sunny Mexico.

Crimes committed by people holding work/study visas are quite rare overall.

I’ve had employees steal from me. More than one. Better to be safe than sorry. Doesn’t matter where they’re from. Must protect yourself, business, and coworkers.
