Just did a job interview with someone who, if hired, would apply for an H1B visa. Is it a bad idea for me to ask that person to do big money payments? The home country does not have an extradition treaty with the USA. Too easy for them to embezzle and bounce to the motherland?

That should be safe. Most people on H1B are planning to apply for green card as the next step. They won't give up for such a sum.

Unless it's millions, otherwise nobody will bother to do it. The risk probably isn't much different for an US citizen to run away with your money to sunny Mexico.
