How big are we talking about here?
Just did a job interview with someone who, if hired, would apply for an H1B visa. Is it a bad idea for me to ask that person to do big money payments? The home country does not have an extradition treaty with the USA. Too easy for them to embezzle and bounce to the motherland?

Not inherently. But the solution is to implement an approval process without a single point of failure. Then audit what they do even so.

Given H1B processing times and random changes to the system you'll most likely end up with a remote worker for large chunks of time either way i think.
