According to @LaStampa, the prefix “melo” was used to indicate that the fruit comes from far, so the Arab “badingian” became “melobadingian” then contracted to “melanzana”.
But I’m suspicious, because “melograno” and “melocotogna” have the “mel-“ which means apple, so 
(Also, as far as I remembet, telo- is the prefix used for “far”, as in telegram, and melo- is music or singing. But I am definitely not an expert at all on the subject, not at all.)
