Indian 'desserts' (I don't quite like that word, cod it implies a certain time when it's served) are seasonal, local and mostly Jaggery based (less refined than sugar). & mostly consumed as part of a meal that includes savouries. So extra-sweetness of say a Mousse is very rare.

Nope. Mostly vegetarian. Most meat-heavy places trend to being Coastal here. The year-round temperatures ensure that. And until recently meat eaters would also consume say about twice or thrice in a week, not more.

I always thought of the northwest and north as vegetarian with all of the South as being meat-eating. Thanks for the info.
