Which is the correct paradigm for longevity and our bodies: Use it or lose it. Use it and lose it. Do our bodies get worn out from use or does use make our bodies stronger? What about stuff like stress?

It varies by part of body. For example ligaments and muscles respond differently to stressors

Stressing muscle makes them stronger. Stressing ligaments makes them weaker

That is incorrect Kevin. All tissues can adapt to load, however each tissue has diffetwnt rates and limits of adaptation.

If I can trust wikipedia, it definitely seems like ligaments and tendons are use it or lose it. Makes sense anecdotally, i.e. the old guy who tries playing basketball for the first time in a long time and pulls a musclepic.twitter.com/aiRFKumyOi

Yes, definitely the body is more use it or lose it. As we age we lose power first, then strength and muscle mass, along with elasticity. So it is good to prioritise activities that develop/maintain these qualities.
