The easy answer is soil depletion (of nutrients) due to over farming, grazing etc. The hard answer is that there might be more complex layers to it, especially for GMOs

You can increase growth rates through breeding/genetics, and supply plenty of N P K, but that "steroid" growth won't absorb as much minerals. Related but not the driver here- higher co2 leads to quicker plant growth and higher carbs relative to micronutrients

Is that the reason? Cabbage just grows too fast to absorb nutrients?
