Think of it this way.Plants protect what they treasure.Roses are beautiful but they have thorns in them to protect.Any veggie that's difficult to cultivate or tastes bad maybe is trying to protect something. Maybe that's why some vegs contain nutrients not found in anything else.

As a general rule, the only plants that taste good are those which want to be digested and then carried somewhere else so the species can expand (?)
