I'm going through applications for a job I posted and it's so overwhelming. Is there a good way to sort through applicants without using intuition?

I've had interviews that placed me in mock-up real-world situations for the position and judged me on merits they viewed fit for the company.

It would depend in the field you're asking for. When I did a microbiology research position, that application would be ineffective. Though if you were doing something more hands on. Such as manual labor or something you can give a more physical exam. It will definitely work.
