I often find myself losing and regaining interest in the various projects i'm working on. Does it make sense to have multiple things running parallel and on every given day do the one you feel like doing, or is it more efficient to have one and force yourself focus?

I don't know. There are a lot of different considerations such as which project is best, hedging, not all projects can be productive at all times (i.e. one project requires sales and it is 9 PM), and like you mentioned motivation.
In the long run, it's probably best to always take on whichever project has better leverage, but at the same time it might make sense to retire the project that is consistently demotivating.
