Is it even possible to make traditional architecture outside of countries like Japan? Here in the United States, if I wanted to build a nice stone building, I'm not even sure it would be possible. No vendors/technicians left.

You could definitely build in brick, and there are certainly still some stonemasons out there. Finding an engineer or architect to sign off on the plans might be the hardest part.

Really? Why would that be? I'm really tempted to do this type of thing. Beautiful buildings like this are much more pleasant to live in and have tremendous sale value.
