Sort of. The more fiber there is in a food, the slower sugar is absorbed by your body. The idea is that if you spike your blood sugar too high too fast, it's bad. I'd guess that there are more complex sugars in honey and there might be some fiber which slows its absorption
What I meant was the rate of absorption by your body, but the ratio of sugar to non-sugar is also relevant. There's some sort of weird biological process...basically sugar/minute has a non-linear relationship with short and long-term health outcomes.
