It's not the quantity of sugar, it's the rate at which it hits your system that is the key datum. Orange =/= Orange juice

Rate as in the ratio between sugar and other stuff you eat at the same time? In that case honey could be better because you also use less of it to get to the same sweetness level.

Sort of. The more fiber there is in a food, the slower sugar is absorbed by your body. The idea is that if you spike your blood sugar too high too fast, it's bad. I'd guess that there are more complex sugars in honey and there might be some fiber which slows its absorption
