What are they going to do with the spare power? My understanding that you can't store it so easily.

Yeah - battery storage is still cost probihitive, but getting cheaper annually. I'm no expert, but my take is they will create transmission lines to send excess solar energy to other parts of the country, and/or wait it out as battery storage gets cheaper.
