TAAROF The concept of 'Taarof' was described to me by a Persian friend some 20yrs ago. As it relates to food it is uncivil to refuse food offered by your host (2nds/3rds,etc). There are others cultures which have similar food customs - maybe one reason why they overeat?

Doubt it. This concept is strongest in the cultures with the fewest fat people.

I think the correlation is weak. KSA has a ton of fat people and I imagine you cannot reject an offer of an additional portion, whereas China has few fat people and it is impossible to reject an additional portion. Obesity rates by country are a function of what, not how much.
