The vast majority of Simpsons characters are stereotypes. It’s explicitly acknowledged in the show. Why you’re so offended by Apu in particular is beyond me. He’s not being singled out.

The Simpson’s show Apu’s culture in episodes which growing up I’ve never seen.To be suddenly offended by this character is funny at best.....there more important injustices in this world. I mean, it’s not like they portrayed him as a terrorist like other shows
