My favorite shop is open from 8:00 AM to 10:00 PM, so I was thinking of getting a clock that's stopped at 9:00 so the shop will always be open.

The more accurate your clock's velocity is the less often it is correct about the time, unless it's calibrated down to the planck second. For the purposes of checking the time, I suggest a clock that runs at 50,000 rpm
