(so it can't be as simple as "your GRC has been reversed, you can use your original birth certificate again." - We would still need documentation, just like a Gender Recognition Certificate, to inform certain organisations and get our sex markers on their records changed back.)

Yes, birth sex re-established. We would just need an official documentation of sort that says "this person has returned to their birth sex" or similar, so our records can be updated again.
