Yes, and gristly bits and my wife cooked a whole pig’s head recently for example. (I don’t especially recommend that). It’s easy to overcook liver; it should be pink inside. It get a sort of grainy bitterness if you cook it through. Good with fried onions and Coleman’s mustard
