i'm overcome by anxiety and discomfort very rapidly (this is me meditating by trying to drop thoughts once they arise)
If none of that works, you could try yoga, which has many of the same benefits as meditation (plus others!).

After practicing yoga for a few months, you may find your mind steadier, and then you’ll be able to go back to meditation.

As for discomfort… meditation is actually a physical practice, like learning to ride a horse. Riding hurts like hell at first.

bt without the ability to 'be empty' wouldn't i miss on the more super 'deep' changes, rather i'd just be learning relaxation?

Well… yes… But generally, getting a good taste of emptiness takes at least a year of hard work. So, one step at a time!
