There’s startlingly little like that. Seems so valuable; why not? Someone must have a collection somewhere… If not, you could do a great service by gathering and linking them.

In math, there’s Thurston’s “Proof and Progress”, plus Gian-Carlo Rota’s essays. And Polya of course, although I didn’t personally find him helpful. I’m drawing a blank for science and engineering, although I feel confident I do know of some good “how to” books in both fields
