I’ve driven the length of nz, and I think riding it would be totally feasible and conditions would be outstanding (roads, weather, landscape). Disclaimer: have never been on a motorcycle.

excellent! i didn't even think to look at roads; i went "eh, i can ride any road an average driver can get a prius over." it was really a one-minute google trying to map intersections of good local weather and the slow season at work. :D

Hundreds of miles of no-traffic single-lane-each-way highways through stunning scenery, and also some nice twisties and country lanes.
