There are tons of popular literature on that stuff, but none on manifolds, varieties, or spectra, which makes me sort of sad.

This, it seems to me, is a profound point that deserves much greater emphasis. Mathematics would have much easier access to funding and support, if mathematicians would recognize and embrace the necessity and obligation to convey the fascination of their art to a broader public.
