Was the original Atlas a single stage? It flew.
It was a 1.5 stage rocket.
The SM-65 Atlas was a "stage and a half" and flew. Don't know of anything that meets a strict "single stage" criterion off the top of my head.

A single stage ICBM would effectively be single-stage-to-orbit and that's never been achieved. The Delta-V between ICBM and orbital requirements is very small.
