What can an artist do when they like so many different mediums and styles to create?
We're told to specialize and be great at "that" particular thing otherwise it will be hard to be a "successful" professional
Having this dilemma since I started drawing as a kid

When someone calls themselves generalists I think they are assuming they'll work in any style including "realism" if the work calls for it, and that's what I mean when I say I can't call myself a generalist because I don't like nor I have interest in "realist" style

That's a tricky question, I haven't thought about it much, even right now working as an 3D Artist for a small studio, but I would like to do more stylized stuff in the future

I think, game artist could fit. With a love for stylized 2d/3d art :)
