Many of those systems rely on busybox and the like. Patching actual binaries is virtually impossible.
I think the best case scenario here is a bunch of greyhats go around and hack IoT devices then patch them against other hackers.

Hopefully updates pushed fast & don't require end user interaction to install/initiate b/c they won't ever be applied.

I might set up some IoT honeypots so I can watch blackhats fighting eachother for control of the boxes.

Setup a ssh honeypot to see some epic script-kiddie action. Meanwhile, the majority of traffic is generated by scantools :\
