So question is do children have an Article 8 right to keep their sex secret from adults (teachers, doctors) and other children in school etc.. or is this an age inappropriate thing to do. How does it reconcile with the safeguarding principles and children's mental health?

That's a very good question particularly from legal perspective, they either have an Art 8 right or not.

The Goodwin case was very specific -- a post op transsexual who apparently passed. No one would know they were male unless they saw their records. A child approaching puberty is not in this situation.
