But that does not mean you can believe your way into other protected characteristics e.g. age, sex, disability, pregnancy which have objective definitions.

Yes indeed. But it doesn't mean a person has changed sex. They should not be harassed or discriminated in general (e.g. refused a booking at a restaurant say, moved out of a public facing job) But it does not literally or legally make them a member of the opposite sex.
